It’s not a nickname, or marketing ploy, it is most recent answer the industry has come out with as a sustainable flour alternative. It is produced just as you would expect, by milling dried crickets into a fine powder. The end product is a flour with a nutritional profile high in proteins, nutrients and amino acids. We have it on good authority that using it in your baking recipes (combined with another flour of your choice) is a great way to boost the protein content of your baked goods.
